Vegetable Omelet for Breakfast, Lunch or Dinner

Breakfast is my favorite meal of the day! Sometimes I have breakfast 3 times a day. Breakfast, lunch and dinner! If I am doing a NO MEAT day, I’ll have a small bowl of oatmeal in the morning with blueberries, Cashew Yogurt for lunch with blackberries and then for dinner a hearty vegetable omelet.

You can’t go wrong choosing to make an Omelet as a healthy choice. Here you get your protein and you can add pretty much most any kind of vegetable. Add lots of vegetables! My favorite omelet to make is one with Spinach, Mushrooms and Red Onions.

What you will need to make your vegetable omelet:

  • half of a small red onion diced
  • Butter flavored spray Pam
  • 7 sliced button mushrooms ( love the Baby Bellas)
  • half cup of egg whites (always have in the refrigerator a carton of egg whites from the grocery)
  • Add one whole egg
  • Add half teaspoon of Frontier No Salt Seasoning
  • Big handful of fresh spinach!
  • fresh ground black pepper
  • Goat cheese

Instructions:

  • Spray your pan liberally with the butter flavored Pam
  • Add in your diced red onions with the stove set to medium high heat
  • While your onions are caramelizing in the pan, whisk together your egg whites, whole egg and your no salt seasoning. Set aside
  • When your red onions are caramelized, add in your mushrooms and cook until they turn brown
  • Next add in your spinach. Add as much as you want! Spinach has a way of cooking down to looking like such a small portion
  • SUGGESTION: If I have some left over grilled or roasted asparagus in the refrigerator, I will add this to my vegetable omelet
  • Next add your whisked eggs to your cooked down veggies
  • As this all cooks down, keep running your silicone spatula lifting up all around the edges to make sure all of your egg is getting cooked and so you have a firm omelet that is not runny
  • Just before I fold over my Omelet, I add in about a tablespoon of goat cheese and fresh cracked pepper.
  • Once folded over, I push down to make sure the omelet is cooked through to ensure the omelet is not runny in the center.
  • Add a bit more fresh cracked pepper.
  • Done!

The great thing about making an omelet is there is so much flexibility with the ingredients you choose. Just remember to pick healthy ingredients! Notice, I did not add any ham, bacon, milk, butter or heavy cheese. While not featured in my photo, adding a side of 1 1/2 cups of assorted berries makes this a complete meal!
