Turkey and Bison Skillet Chili served with Polenta

Seems many these days many are craving comfort foods. The trick is cooking comfort foods not too heavy in calories. Using lean ground meats, such as ground white turkey and ground Bison combined with crispy turkey bacon and flavorful veggies and seasonings, this recipe turned out to a big winner with my husband!

Here is what you will need:

  • 2 pounds of white meat ground turkey
  • 1 pound of Bison ground meat
  • Half package of turkey bacon
  • 1 large fennel bulb diced (set aside some of the fennel fronds)
  • 1 medium red onion diced
  • 2 leeks sliced
  • 3 large carrots diced
  • fresh parsley
  • half bag of frozen grilled corn
  • 2 cans of Bush’s KIDNEY Beans in mild chili sauce
  • half of a 8.25 oz carton of LOW SODIUM chicken broth
  • 1/2 teaspoon of smoked paprika
  • 1 teaspoon of Cumin
  • 1 teaspoon of Corriander
  • 1 teaspoon of Chili Powder
  • Tabasco
  • 1 bag of quick cooking Polenta (follow the cooking directions on the bag. I cook mine either in vegetable or chicken stock instead of water and I will typically add a 1/4 cup of goat cheese for creamy texture. Be sure to add salt and pepper to taste and perhaps a few dashes of Tabasco) In some stores, you can find already cooked Polenta that has added ingredients which typically means added calories…so be sure to read the label! Cook your Polenta 5 minutes before you are ready to serve.

Instructions:

  • I suggest using a ceramic or cast iron skillet for this recipe. I like Lodge
  • Add in your diced up turkey bacon and cook until crispy. When done set aside on a plate
  • Add a bit of olive oil to your pan and then add in all of your veggies with all seasonings and cook down until soft and slightly browned
  • Add a cup of your chicken (or vegetable broth) scraping all the bits off the bottom of your pan.
  • Add in all of your ground meat and mix in well with your veggies breaking down the meat into pieces.
  • Once your meat is cooked, add in your cans of the Bush’s KIDNEY Beans in mild chili sauce and mix in well.
  • Add in your half bag of frozen grilled corn
  • Add in more of your Chicken or Vegetable broth. You want your skillet chili to be somewhere in between thick and juicy. Remember, your polenta is going to absorb much of the liquid when served, so it is important there is some liquid.
  • Add in about 8 dashes of your Tabasco
  • Add in a bit more seasoning of the Cumin, Coriander and Chili Powder
  • Just before serving, top with your crispy turkey bacon, fennel fronds and fresh parsley
  • Add to your Polenta as suggested above. (Polenta is a much healthier alternative than any type of pasta or rice)
