Split Pea Soup with Ham

Ingredients
What you will need:
- 1 lb. bag of split green peas ( I buy 365 Organic from Whole Foods)
- 1 package of Chisesi Ham Seasoning (it is in the Meat section & cubed)
- Cut each cube in half
- 6 – 8 large carrots – cut in small chunks
- 4 stalks of celery chopped
- 1 large onion chopped
- About 3 – 4 oz boxes of low sodium vegetable broth
- Herbes de Provence (get at Whole Foods)
- Tabasco
Instructions
- With a bit of olive oil & salt & pepper add onions & celery to pot and saute till the onions are carmelized.
- Add in a bit of broth to deglaze the pot, scraping the bits of brown from the bottom of the pot.
- Add in split peas, 1 cup of peas to 2 cups of broth at time.
- Bring pot to a boil, covered, on medium to high heat
- Add in carrots
- Add in ham
- Add in 2 teaspoons of Herbes de Provence
- Add about 7 dashes of Tabasco
- Boil at med – high for about 20 minutes stirring regularly, then drop back to a simmer for about 45 minutes covered. Checking regularly/stirring. If you feel it gets a bit too thick, add a bit of broth. Soup will thicken as it keeps boiling/simmering.
