Spiralized Vegetable Dinner with Salmon

As you can see from my blog, I love vegetables and I love Fish. Salmon is my most favorite fish. I could eat Salmon everyday and never get tired if eating it! Tonight was a quick prep. While I typically Spiralize my own vegetables, I was lucky to find this week at Whole Foods Spiralized Zucchini and Spiralized Butternut Squash in the Produce section. Such a simple dinner to prepare and so satisfying! Makes great leftovers.
Ingredients
What you will need in the event you are not able to already buy spiralized vegetables and you will need to do your own:
- 7 Zucchini
- 1 medium Butternut squash
- 1 (or more) tablespoons of Herb Fest or Italian Seasoning by Frontier (or any mixed herb seasoning…Mrs. Bragg makes a great one too)
- 2 Tablespoons of Goat Cheese (or more if you like) This will make your vegetable noodles creamy.
- A pinch of salt
- A pinch of pepper
- One and a half tablespoons of Reduced Sugar Craisins Cranberries by Ocean Spray
- (2) 8 oz portions of FRESH Atlantic or Pacific Wild Caught Salmon on skin. Please don’t buy fish in the Frozen section if you don’t have to….it never tastes as good as fresh.
Instructions for your Spiralized Vegetables:
- Spiralize your Zucchini and Butternut Squash. The spiralizer I own is OXO Spiralizer. Retails for under $ 40.00. I find spiralizing fun and brings a sense of instant gratification.
- When done spiralizing, toss into a big bowl and add all of your seasoning and your Cranberries.
- Here are two options for you. You can either warm the entire bowl in the microwave for about 2 and a half minutes and then toss in your goat cheese OR you can scoop a generous portion into your dinner bowl and warm in the microwave for about 2 minutes and then add your goat cheese to your portion. The key here is when you warm your spiralized veggies, you want them just warm enough to where you don’t overheat and cause them to lose their liquids resulting in liquid at the bottom of your bowl. You want your “noodles” to be aldente.
Easy Instructions for cooking the Salmon:
- (2) 8 oz portions of FRESH Atlantic or Pacific Wild Caught Salmon on skin
- Be sure to pat your Salmon Fillets dry
- Oven temp should be 350 degrees, same as your Asparagus
- Season with Salmon Seasoning by Frontier liberally
- Season with fresh or dried Dill liberally
- I like my Salmon cooked medium rare…. Really the best way to eat. Bake at 350 degrees for 13 minutes. DONE!
- Top your Salmon with a Teaspoon of Mango Chutney. My favorite brand is made by Sukhi’s Gourmet Indian Foods Company.
