Pork Tenderloin with Mashed Orange Sweet Potatoes

Pork…the other white meat. There are so many ways to cook a pork tenderloin. I love a tender, juicy piece of pork cooked low and slow in my dutch oven pot with lots of mushrooms and sweet caramelized onions. I especially like it with a side of mashed sweet potatoes.
Ingredients
(One) 2 pack of lean pork tenderloins
2 big boxes of whole Portobello mushrooms
Mango Spicy Pickapeppa
2 Oranges
3 Vidalia onions
5 – 7 sweet potatoes
Thyme
Italian seasoning
Garlic Rosemary seasoning
Pepper
Salt
Instructions
Prep:
- Peel & dice your sweet potatoes
- Squeeze Juice of 1 ½ Oranges over all
- Season with salt & pepper
- Drizzle just a little bit of olive oil
- Toss everything together w/hands to coat
- Bake at 350 degrees for one hour
- Mash them. OK if lumpy but not chunky
- Add the zest of a whole orange
Prep: (Meat)
- Drizzle olive oil in pan, put on high
- Add seasoned meat (w/ last 5 ingredients)
- Brown meat on both sides creating some brown marks on bottom of pot. Brown for a total of 5 minutes
- Remove from pot
- Add all of our sliced onions and toss till turn brown. Once carmelized, add thyme, Italian seasoning, salt, pepper & pickapeppa (about 4 tablespoons)
- Cut each of your mushrooms in half & add to onions. Toss together for a couple of minutes.
- Pour in a cup of water (add more if needed)
- Deglaze pot to create gravy
- Add meat back to pot
- Cover and place in oven for 45 minutes at 350 degrees
- Garnish w/chopped fresh parsley
- Serve beautifully around sweet potatoes
