Let’s talk about planning. I love to plan. I plan my workouts, my time with my husband, friends and most importantly my meals for the week. Planning helps to keep you disciplined.
My husband and I have just returned from vacation. During our reflection of our vacation, he paid me the wonderful compliment of saying “you sure know how to cook…I don’t think anyone else eats such great home cooked meals on vacation.” I think it helps too I pack my top 10 seasonings and spices in our luggage every time we go on vacation. Do you know of anyone who packs their seasonings for vacations? Well now you do!
To be honest, I really did not know what I was going to cook each night of our vacation. I just knew it needed to be healthy, fast and with a minimum amount of ingredients. You can cook like this every night whether or not you are on vacation. For example, one night I seared some sashimi grade tuna in a skillet cooked medium rare and then for a side, I simply caramelized a Vidalia onion, added some sliced baby portabellas and then added some fresh spinach. My side dish was simply seasoned with an all-purpose seasoning mix, 3 dashes of nutmeg, creole mustard and a bit of balsamic glaze. Delicious! Look for this recipe posted to my blog.
When I go to the grocery, I simply select produce I like on that particular day and then I decide after I get home what I will do with all my purchases. Think simple and you will be surprised what kind of dinner you can put together in a short period of time.
