Italian Mushroom Salad

I had a similar salad to this in a restaurant that had closed several years ago. It was a restaurant I would occasionally go to with my mom and dad. When my mom was in the hospital for several months, my husband and I had my dad over for dinner and I fixed this salad as part of dinner. He absolutely loved it. Since my dad is no longer here with us as of August 2019, this is one salad that will always make me think back on the smile this brought to him.

Ingredients

What you will need:

  • 1 large box of sliced white button mushrooms (add a small box too if you want more)
  • Sliced peppercorn salami – about 7 sticks cut into small squares
  • 3 garlic cloves, chopped fine
  • 1 large juicy lemon
  • 2 – 3 tablespoons fresh parsley, chopped fine
  • Italian Dressing ( I buy Bolthouse Farms Italian Vinagrette Dressing which is very low calorie)
  • Salt & pepper

Instructions

Add all of the ingredients above to a bowl, saving the dressing & parsley to the end.

Toss with your hands – the lemon juice, garlic, mushrooms & salami till everything has a bit of lemon juice.

Then add in the dressing a little bit at a time.  You want everything coated (not swimming).

Add salt & pepper to taste.  Let this marinate 1 -2 hours.

Garnish with parsley.

You can sprinkle over the top w/Parmesan Reggiano or Balsamic Glaze

Looks pretty served in lettuce cups.
