Lemon Ice Box Pie

While my site is called Healthy Within Reach, sometimes a special occasion calls for a bit of a splurge. However you will see below I do suggest using Fat Free Sweetened Condensed Milk for my Lemon Ice Box Pie. My philosophy is, if there is the opportunity to save a bit on fat or sugar… I am going to take it! Should you make this for Easter or any special occasion, you will get tons of compliments!

Ingredients

For Crust:

  • Crush ¾ (or more) box of vanilla wafers & mix with ½ stick of melted butter
  • Press into pie plate
  • Bake in oven at 350° for approximately 10 minutes

For Filling:

  • 4 eggs separated
  • 2 cans of Fat Free sweetened condensed milk by Eagle Brand (Yum!)
  • 3 teaspoons of grated lemon peel
  • ½ cup of fresh lemon juice
  • ½ cup powdered sugar

Instructions

  1. Beat egg yolks till lemon colored and thick
  2. Add condensed milk, lemon peel & lemon juice. Stir until thick.
  3. Pour into crust
  4. Beat egg whites with hand held mixer on high speed with ½ cup powdered sugar till stiff. (Make sure no yellow yolk gets in your egg whites or it will not get stiff.)
  5. Spread on top of pie.
  6. Put in oven on BROIL till golden – watch very closely – will be done in about 3 minutes.
