Lemon Ice Box Pie

While my site is called Healthy Within Reach, sometimes a special occasion calls for a bit of a splurge. However you will see below I do suggest using Fat Free Sweetened Condensed Milk for my Lemon Ice Box Pie. My philosophy is, if there is the opportunity to save a bit on fat or sugar… I am going to take it! Should you make this for Easter or any special occasion, you will get tons of compliments!

Ingredients
For Crust:
- Crush ¾ (or more) box of vanilla wafers & mix with ½ stick of melted butter
- Press into pie plate
- Bake in oven at 350° for approximately 10 minutes
For Filling:
- 4 eggs separated
- 2 cans of Fat Free sweetened condensed milk by Eagle Brand (Yum!)
- 3 teaspoons of grated lemon peel
- ½ cup of fresh lemon juice
- ½ cup powdered sugar
Instructions
- Beat egg yolks till lemon colored and thick
- Add condensed milk, lemon peel & lemon juice. Stir until thick.
- Pour into crust
- Beat egg whites with hand held mixer on high speed with ½ cup powdered sugar till stiff. (Make sure no yellow yolk gets in your egg whites or it will not get stiff.)
- Spread on top of pie.
- Put in oven on BROIL till golden – watch very closely – will be done in about 3 minutes.
