Lean Meatloaf with Bison, Veal and Lean Ground Beef

While I rarely eat meat, this meatloaf recipe is popular in my house. If you are looking for a recipe for meatloaf that has little to no fat, this you want to try. I love adding Bison to my veal and lean ground beef meatloaf mixture, as I find it adds more flavor. The true tell all this is a lean meatloaf recipe is when you lift the broiler pan and you hardly see any fat drippings in the tray. This meatloaf also has some veggies and has whole grain oats.

Here is what you will need to make your meatloaf:

  • broiler pan
  • One pound of ground beef 80/20
  • One pound of ground veal
  • One pound of ground bison
  • 3 eggs
  • 1 cup of whole grain quick oats
  • 3 large carrots diced
  • One large sweet onion diced
  • 3 large stalks of celery
  • 4 large cloves of Garlic
  • 6 dashes of low sodium Worcestershire
  • 6 dashes of Tabasco
  • One tablespoon of Frontier Italian Seasoning
  • One large bunch of chopped FRESH Basil
  • One package of Turkey Bacon
  • One small can of tomato paste, however I baste the top of my turkey bacon with Raspberry Chipotle Sauce by Fischer and Wieser…. love this stuff…. a must have for your pantry

Instructions

  • Preheat the oven to 350 degrees
  • Add all of your diced onions, celery and carrots to a pan with just a small drizzle of olive oil. Add a bit of salt and pepper. Cook on medium to high heat and cook down till all veggies are soft and the onions have caramelized. When done, set aside and let cool.
  • Add all of your 3 ground meats to a large mixing bowl
  • Add in your 3 eggs, 6 dashes of low sodium Worcestershire, 6 dashes of Tabasco, one cup of whole grain quick oats, mince in your 4 cloves of garlic and one tablespoon of Frontier Italian Seasoning.
  • Add in your cooked veggies and your chopped fresh basil. Mix everything together well with your hands. Your hands are your best mixing tools!
  • Take all the meat out of your mixing bowl and place on top of your broiler pan, with the tray underneath, and mold in the shape of a big loaf as pictured below, layering the top with your turkey bacon where each piece slightly overlaps the other. Be sure to tuck your bacon pieces under your loaf.
  • Baste the top of your bacon strips with either your tomato paste or better yet, with Raspberry Chipotle Sauce by Fischer and Wieser
  • place in the oven for 1 hour on the top rack at 350 degrees
