Ingredients

What you will need:

  1. 4 Garlic cloves
  2. Juice of one Lemon
  3. Fistful of Parsley and/or Basil
  4. Handful of Pecan pieces
  5. Tablespoon of Parm/Reggiano

You really don’t need the olive oil, but you can add it if you wish. If you do, add a tablespoon. Also, if you don’t have Basil or Parsley, you can substitute for Spinach.

Instructions

  • Roast garlic or toast the garlic in a pan with a teaspoon of olive oil.
  • Squeeze juice of 1 large lemon.
  • Handful of parsley and/or basil
  • Toast pecans in a pan for about 2 – 3 minutes after toasting garlic

Add all 4 ingredients above including 2 tablespoons of the Parmesan /Reggiano to a food processor.  Done!

Mix in with spaghetti squash or top chicken or salmon.  Also makes a great dip for a raw veggie snack in the afternoon with zucchini or squash.
