Oil Free Pesto

Ingredients
What you will need:
- 4 Garlic cloves
- Juice of one Lemon
- Fistful of Parsley and/or Basil
- Handful of Pecan pieces
- Tablespoon of Parm/Reggiano
You really don’t need the olive oil, but you can add it if you wish. If you do, add a tablespoon. Also, if you don’t have Basil or Parsley, you can substitute for Spinach.

Instructions
- Roast garlic or toast the garlic in a pan with a teaspoon of olive oil.
- Squeeze juice of 1 large lemon.
- Handful of parsley and/or basil
- Toast pecans in a pan for about 2 – 3 minutes after toasting garlic
Add all 4 ingredients above including 2 tablespoons of the Parmesan /Reggiano to a food processor. Done!
Mix in with spaghetti squash or top chicken or salmon. Also makes a great dip for a raw veggie snack in the afternoon with zucchini or squash.
