Baked Corn Fritter Casserole

So many ways to use your box of Jiffy Corn Muffin Mix! This will be sure to please all ages! A perfect side for your upcoming barbecue or alongside your favorite Mexican dish. Fast prep! You will see I saved a bit of calories by using the fat free cream cheese.

Ingredients

What you will need:

3 tablespoons of butter, softened

3 large egg whites

1 –  8oz block of fat free cream cheese, softened

1 medium Vidalia sweet onion, finely chopped

1 large red bell pepper, finely chopped

1  – 15 ¼ oz can whole kernel Green Giant corn, drained and buy unsalted

1 – 14 ¾ can cream style Green Giant corn

1 – 8 ½ oz package of Jiffy Corn Muffin Mix

Season with black pepper

Instructions

  1. Pre-heat oven to 375°
  2. Spray your ceramic casserole dish with a non-stick cooking spray.
  3. Combine first 3 ingredients above and stir w/whisk or hand blender till smooth. Stir in onion, bell pepper, both cans of corn, mix well.  Add muffin mix & black pepper, stirring till all combined.
  4. Bake at 375° for 50 minutes or until a wooden toothpick inserted in center comes out clean.
