Black Bean and Corn Soup with Rotisserie Chicken

Do you love soup? I know I do. I find soup to always be filling and satisfying. I love beans and typically have a variety of beans in my pantry….black beans, kidney beans, cannellini. I also have a variety of dried beans, lentils and peas in the pantry. My favorite canned beans are those made by Bush’s. You will see in this recipe I did use 2 cans of Bush’s Black beans in a mild chili sauce. While I did make this recipe with chicken, this soup is equally great without chicken.

Here is what you will need to make this very easy soup:

  • 1 Rotisserie Chicken diced
  • 2 16 oz cans of Bush’s Black beans in mild chili sauce
  • 1 15 oz can of black beans
  • half bag of grilled frozen corn. If you can’t find the grilled variety, regular yellow corn will do.
  • One large sweet onion diced
  • 4 large carrots diced
  • 4 large stalks of celery sliced
  • 1 poblano pepper diced
  • 3 8.25 oz cartons of chicken broth
  • 1/2 teaspoon of smoked paprika
  • 1 teaspoon of Cumin
  • 1 teaspoon of Corriander
  • 1 teaspoon of Chili Powder
  • To Garnish….here are some suggestions: Dollop of Greek Yogurt, red onions, diced Avocado, shredded cheese and cilantro. Easy on some of the toppings if you are watching calories.

Instructions:

  • In your dutch oven pot, add a bit of olive oil to the bottom of your pot, just enough to coat your onions, poblano peppers, celery and carrots with a bit of salt and pepper. Cook all of these down till they are soft and your onions become almost caramelized.
  • Add in one carton of your chicken broth, scraping the bits off the bottom of your pot.
  • Add in all of your seasonings
  • Add in about 8 dashes of Tabasco sauce
  • Add in all cans of your black beans
  • Add in another carton of chicken broth
  • Add in half bag of frozen grilled corn
  • Add in your diced Rotisserie Chicken
  • Add more chicken broth till it has reached the right thickness for your taste.
  • On medium heat, let your soup simmer for about 20-30 minutes stirring occasionally.
  • When done, top with the garnishes of your choice as suggested above at the bottom of ingredients
