Bean Side Salad

My husband loves when I make this salad. While I typically make this salad in the summer months, certainly great all year long. As you read below, I suggest serving this with a baked chicken breast. Often for lunch, I will skip the meat and simply spoon a generous portion of this bean salad over some fresh spinach. Loaded with protein and will hold you over till your 4pm light afternoon snack! You will find my choice of ZERO calorie salad dressing makes this extra tasty.

Ingredients

What you will need:

  • One 8 oz can of garbanzo beans (rinsed)
  • One 8 oz can of black beans (rinsed)
  • One bag of frozen edamame (not in shell)
  • One bag of frozen grilled corn
  • One small red onion diced
  • 2 limes, juiced
  • Zest of one lime
  • Sugar free Chipotle Ranch Dressing (the brand is Walden Farms) Add small amounts at a time. This is a ZERO calorie dressing
  • 1 teaspoon Tequila Lime Seasoning (from Whole Foods)

Instructions

Add everything to a large bowl to the juice & zest of the limes, then add the dressing a little bit at a time.  All ingredients should be coated (not swimming)

Let this all marinate together for a couple of hours.

I like to serve this in a lettuce cup as a side to baked skinless chicken breasts.
