Baked Portobello Mushrooms

Make this as a side or to make as a sandwich for lunch or dinner. Wonderful in between two slices of English Muffins with lettuce and tomato.

Ingredients

What you will need:

  • 8 large big round portobello mushrooms
  • 8 large cloves of garlic (or more)
  • 2 lemons
  • Olive oil
  • Goat cheese
  • Italian Seasoning
  • Tarragon
  • Fresh cilantro
  • Fresh basil

Instructions

Preheat oven to 350°

  1. Place portobellos on a sprayed baking sheet with the bottom part faced up
  2. In a small bowl squeeze juice of two lemons and mix w/ about 2 tablespoons of olive oil. Pour or brush on all of the mushrooms.  (add a bit more olive oil if you must!) . . . Add diced garlic.
  3. Sprinkle w/all seasonings. (Saving the basil to add toward the last 10 miunutes of cooking.)
  4. Crumble the goat cheese w/a fork and sprinkle all over the mushrooms.
  5. Bake in oven for about 40 minutes.

Take one of the large roasted portobello caps and put in between your English Muffin halves with butter lettuce and tomato. Makes a great meatless sandwich! Skip the mayo and add a bit of my pesto featured here at my blog.
