Anything in the Refrigerator about to expire?

Today I just did not have time to get to the grocery and I needed a vegetable side to go with my baked Turkey Tenderloins. I bet you are like me and have a Freezer over stuffed with frozen veggies. In my refrigerator I had some left-over zucchini and yellow squash. So, I was thinking, what do I have I could add to these two items? Well I found a bag of Green Giant frozen Cauliflower Rice with Riced Sweet Potatoes. I simply followed the microwave instructions and then tossed the veggie riced mixture into a bowl with my sliced raw zucchini and yellow squash. Added some seasonings and then put the entire bowl of mixed veggies into the microwave for 6 minutes… just enough to make the veggies tender, but still have substance when you go take that first bite. Not only did this turn out delicious, but also very colorful. If you don’t have a riced cauliflower mixture, just leave it out. A great addition is to add some grilled red onions to the mix. To jazz things up a bit, I brush the tops of the thickly sliced red onions with some Mango Chutney or Mango Pickapepper. This is a pantry staple for me.
