Potato Substitute- Mashed Cauliflower with Garlic and Cream Cheese

I bet you love potatoes, but you don’t love all the carbs and calories that come with them. Here is a mashed cauliflower dish with cream cheese and roasted garlic I made for my husband. He loves potatoes, however it did take a few bites before he realized he was not eating potatoes. While he still loves “real” potatoes, he thought this was an acceptable substitute when watching carbohydrate intake.

Ingredients

What you will need:

1 large head of cauliflower or more depending on size

1 roasted whole garlic

½ package of reduced fat Philadelphia Cream cheese

Chopped fresh parsley

2 tablespoons of Parmesan Reggiano

Instructions

  • Boil cauliflower until tender
  • Drain
  • Add to pot and begin to mash
  • Add all other four ingredients listed above and keep mashing until almost smooth. Use an immersion blender or hand mixer.
  • Add pepper to taste

Excellent served w/smothered pork chops w/ caramelized onions & mushrooms!
